Chewology finds new Westport home, leases former Bluestem space
Kansas City, Mo. — Starting in August, the Asian restaurant Chewology will open its doors in the former Bluestem space in Westport, located at 900 Westport Road.
Formerly based in Lenexa Public Market, Chewology has served up Taiwanese-inspired street food, including handcrafted dumplings, bao and noodle bowls, for the past nearly four years. The new Westport space will allow owner Katie Liu-Sung to expand the restaurant’s menu, which will include an array of Chinese, Japanese, Korean and traditional Taiwanese dishes.
The former Lenexa location will close in June, and Chewology plans to reopen in its new Westport home in mid-August. The venture is Chewology’s first stand-alone, full-service restaurant.
In selecting her restaurant’s new location, Liu-Sung sought a more urban space so Chewology can offer expanded dinner and nighttime service as well as a full bar. She chose the former Bluestem location after looking at spaces in the Crossroads Arts District and other parts of Westport.
“They’re big shoes to fill, but it’s exciting we can continue Bluestem’s local legacy and offer a great dining experience in this space,” Liu-Sung said. “I was extremely fortunate to have kickstarted this journey in Lenexa Public Market, and I’m happy to see another business blessed with the same opportunity and flourish with the space we built four years ago.”
Erin Johnston, Vice President of Retail Leasing at Copaken Brooks, represented Chewology in the deal while Bill Schultz of Schultz Real Estate Development LLC represented the Landlord/Property Owner.
